The old grenache and syrah vineshoots of the Domaine des Amouriers grow in a soil made of clay, chalk and water-rolled pebbles, and their grapes are harvested manually every year. Thorough grape selection, low yield (between 20 and 30 hl/ha), traditional vinification in concrete vats, long maceration (25 to 30 days): that is what it takes to produce “Les Genestes,” a dense, deeply-coloured, richly-structured wine that is definitely voluptuous. The spicy notes (the garrigue is right there!) and the liquorice combine with the aromas of black fruits and that of the violet, which gives it a sinfully delicious touch. This wine is a perfect match for any tasty meat casserole, a Provençal vegetable tian, or a tajine featuring almonds among its ingredients.
